This weekend we're grilling! Our appetizer: Roasted Clams & Oysters!: To roast just wash thoroughly, place directly on grill in shell & cover...when they open they are finished! Be sure to enjoy the natural broth in which they steam inside the shell! Serve with melted butter and/or cocktail sauce or try some hot sauce! Next we're grilling Mahi Mahi with pineapple rings. Rub a skin-on Mahi filet (flesh side) with vegetable oil, season with granulated garlic (not powdered), coarse salt & coarse black pepper...pat these seasonings into fish. On clean medium heat grill place Mahi skin side down. Cook halfway (roughly 7-8 minutes), squeeze fresh lime often over fish while grilling. Turn fish to flesh side and finish. At this point, if desired, skin will peel away with ease. On a high heat clean grill place canned sliced pineapple rings. Grill on each side until well-marked and serve along with Mahi. Marty suggests a white basmati rice on the side. And hellovino.com suggests Torrontes wine, a white wine with exotic fruit aromas and flavors of lemon zest, peach, & apricot. Bon Appetit!
